Soil: Sand, loam
The ripe, healthy grapes were brought to the press house in small boxes at the end of October. After destemming, the whole berries were fermented in the fermentation rack for 14 days. After pressing, the malolactic fermentation was carried out in used barrels (300 + 500l). This wine then matures for 18 months in our old natural cellar at a constant temperature of 11 °C. After the assemblage, it was put on the bottle at the end of February.
