Pinot Noir grapes are hand harvested at the ideal ripeness point into small boxes following by gently whole bunch pressing. The wine matures for ten months in stainless steel tanks and big oak casks. After bottling for second fermentation, it is resting for 30 month on the lees, which contributes to the creamy texture. Hand riddled and disgorged on our estate.
